Perfect cocktail for sipping in the backyard and enjoying the sun!
2 oz Burwood Gin
2½ oz fresh Pink Grapefruit Juice
2-3 Cucumber slices
Fresh mint – a small handful
½ tsp. simple syrup – a 1 to 1 ratio of water and sugar
In your shaker, add most of the cucumbers (save same for garnish) and mint. Muddle together until broken down, using a wooden spoon or cocktail muddler. Pour in the gin, (optional: cover with plastic wrap and place in the fridge for at least 4 hours, or overnight for it to be more infused. Strain out the cucumber and mint, discarding, and just reserving the infused gin.)
When ready to make the cocktails, fill your rocks glass with ice. Pour your infused gin into the glass, add 2 ounces grapefruit juice, and top off with sparkling water. Garnish with sliced cucumber and mint leaves. Enjoy!
